Enchilada casserole

Yummy one of our favorites these are great also to make ahead or to give to a new mom.

3 lb of hamburger cooking in a frying pan
add taco seasoning to hamburger and 1 cup water and cook a few more min
1 pkg of tortillas
1/2 can spagetti sauce
1 can enchilada sauce
2 lbs cheese

salsa and sour cream

I use a roaster pan so they can be thicker. so I layer 2 tortillas, 1/4 hamburger, 1/4 spagetti sauce, sprinkle cheese
then 2 tortillas , hamburg, ect

when you reach the top dump on the enchilada sauce and sprinkle cheese

bake 350 for about 40 min

when out top with salsa and sour cream.

Chicken pot pie and soup

If you take your left over chickens and put them in a large sauce pan and boil for a few hours all the little bits of meat will fall off. I enlist one of my children to pull the meat of the bones and then I have 2 product 1 is chicken stock the other chicken.

To make chicken soup or pot pie are simalar
1 stick of butter
1 onion chopped
celery if you have it
saute for a min
until soft. then add left over veggies or cans of veggies whatever you have green beans peas, carrots, beans throw them in with the juice for the can we home can so there is lot of healthy things in there. then add chicken now I add about 1 cup of flour with a whisk if for pot pie if not I elimate. then I add broth to cover everything. If soup I cover about 3" higher. If potpie I barely cover. soup i wait for it to come to a boil add cooked rice or noodles and drop in dumplings again look at the biscuit recipe and add about 1 cup more milk or water until sticky.

crust for pot pie is flour, shortening and cold water I will need to measure as I usually eye ball it.

pot pie we dump into 13x9 pans and just cover with pie crust. you can also change it up alittle by making cornbread and dumping over the top.

Crockpot beef stew

This is SO easy great for sunday come home from Church so the delicous smell

1-2 lbs of beef
1 lb carrorts chopped large
1 onion chopped
3 stalks of celery

now you can add potatoes here or you can serve over mash potatoes.

fill with water and seasoning. turn on low.

When home from church you can make mash potatoes or You can make dumplings which is just my biscuit recipe with added water to make it more sticky plop in and turn on high.

momma favorite biscuits

6 c flour
9 spoons( honestly I don't even have a measuring spoon so I use a T about 1/2 of it ?)of baking powder
couple twist of salt
1 1/2 sticks of butter cut up

turn mixer on and add

2 eggs
2 c milk ( see hints with milk)

mix roll out and I use a canning jar lid and cut my biscuits.

Cream of broccoli soup

Same Idea as corn chowder

1 stick butter
1 chopped onion
1 large head or brocoli or package of frozen brocoli( I throw this in food processor)

SO I mix those in a sauce pan until tender then add

1/2 cup flour
mix
add 1 qt broth
and 1 qt milk

cook for about 10 mins then add cheese either 1 hand ful of shreadded cheese or a couple T of cheese in a jar ( if you buy a BIG can you can put into ice cube trays and then put them into zipper bag so you can just throw a couple in when cooking)

serve warm with biscuits yummy moms favorite

toasted tortillas

so easy just take homemade or store bought tortillas top with cheese and place under the broiler for a few mins slice and serve.

Salads

Making salads could be VERY costly unless you just outside of the box. Buying a darker lettuce like romaine or a bucket of various greens then adding things that are in season or cheap.
nuts
mangerine oranges
clemintines
apples
raisins
cheese
homemade crutons
beans one of our favorites
onions
carrots
parmesean

Corn chowder

In a sauce pan add
1 stick butter
4 slices of choppedbacon
1 large onion chopped

until tender then add 1/2 cup flour

then add 1 can of corn
then 1 quart chicken broth
1 qt milk

great served with corn fritters!

Jag

1 stick of butter
1 onion chopped
about 2 cups choped kale( so cheap yet so healthy)
1 kielbasa chopped
cooked in a sauce pan until tender.
then add beans I usually use leftover kidney beans about 2 cups
add abdobo, salt and pepper
then I add 1 quart of chicken stock
then add 2 quarts of water
then add rice about 6 cups of rice
cover and cook about 15 minutes

With rice if you cook until there is about 1 " of water remaining on the top. then leave covered while setting the table and your rice will be done yummy.

English muffin tuna

So just mix up your tuna the way you like it.

WE like to grill our english muffin in a frying pan with butter once grilled I flip them over add tuna and sprinkle on some cheese until cheese is melted.

GReat with pickles and chips! chips are cheap IF you use coupons. I never spend over $1 for chips if we cannot do that I will make popcorn which is super cheap. Got to have picles in the recipe. Either buy a BIG old tub for $5 or make your own!

CHeap Veggie soup

SO easy take you leftover veggies for the week dump them in the pot then add 1 jug of vegetable juice then fill that veggie juice jug with water and dump that in. add rice or leftover cooked noodles form the week. Ifyou have left over mash potaotes throw those in too. Taste and season to your liking. SO easy and yummy. Add cheese or crotons whatever you like.
